You can set reminders on your Apple Watch to tell you to start and stop exercising if the watch detects that you are doing any physical activity. If the reminder is turned on and you have started exercising, your watch should automatically detect the activity you are doing and ask if you want to start recording.
Request to record as a notification on your watch and provide some options: Record workouts, change workouts Shut up for today and reject. You can choose to record your workouts if the clock sets the correct activity. The device should also ask you to stop recording after it determines that you have completed the exercise.
